Quick Cooked Carrots
Someting easy, tasty, healthy and coloful for your plates. Serves six normal people, but my son and daughter will eat the recipe themselves!
1 pound carrots, peeled, ends trimmed and sliced on the diagonal about 1/4" or less thick. The thicnness should be uniform for uniform cooking.
2T unsalted butter
2 T water
1/2 t sugar
1/2t salt
Ground black pepper
1 T minced fresh parsley leaves and/or chopped nuts
In 10" skillet bring carrots, water, butter, sugar and salt to boil over medium heat. Cover and cook 3 minutes.
Uncover and continue to cook over medium heat until remaining water evaporates, about a minute. Stir if necessary. Saute until tender, about 1-2 minuites more. Sprinkle with parsley/nuts and serve.
