Blue Cheese Flan- goes a long way and serves an army as an hors d'oevre
3/4 cup crushed buttery cracker (optional)
2 T melted margarine (optional)
1 pkg. 4 oz. cream cheese (room temperature)
1/2 T sugar
1pkg. 2 oz. blue cheese crumbles
5/6 cup sour cream
1 1/2 eggs
1/16 t pepper
orange or lemon yogurt (optional)
(optional step) Combine cracker crumbs and margarine. Spread on bottom of 9"springform pan and bake in a 350 degree oven for 10 minutes.
(I am not sure this step adds much to the recipe. Omit it if you like, I do) (it's OPTIONAL)
Combine cream cheese and chopped blue cheese until well blended (add 1/2 T sugar), and add 1/2 cup sour cream (reserving the remainder for later), eggs and pepper. Mix well. Pour into a 6" springform pan and bake in 300 degree oven for 45 minutes. (Or until the top is set , it's taken up to 60 minutes)
Stir sour cream (and combine yogurt if desired) and spread over cake and bake for an additional 10 minutes. Cool completely, refrigerate and unmold. Serve with fruit and crackers or french bread. Can be prepared a few days in advance, and keeps very well.
The original recipe serves an army. I have halved it here for a smaller group., I have doe it at half recipe and it works fine.If you, in fact, have an army coming, prepare twice f the recipe in a 10-12" springform pan; it will be fine.
This recipe is light and rich at the same time. The blue cheese is mellowed by the cream cheese, making it very popular.
